The following recipe is supplied by Roma who has used it for many years with great success. You are welcome to try it yourself to see if you get great results too! The same recipe can be used for different fruits.
Method
(1) Put fruit and water into a preserving pan or large saucepan.
(2) Simmer slowly until the fruit is soft
(3) Stir in the warm sugar as this will make it dissolve more quickly.
(4) Put in a small know of butter as this will help prevent a scum forming
(5) Boil rapidly for about 30 minutes.
(6) Put on a saucer about a tablespoon of jam and allow to become quite cold then see if a skin forms and wrinkles with a spoon. Take the pan off the heat.
(7) Fill jam jars that have been warmed in the oven to about 1/4 inch from the top.
(8) Place a waxed disc on the top.
(9) Then use transparent covers on the top.

6lbs Strawberries
1/2 Pint Water
6lbs Granulated Sugar
Juice of 2 Lemons
Gooseberry Jam
6lbs Gooseberries
1/2 Pint Water
6lbs Granulated Sugar
